With Chef-Owner Josh Raine (Tetsuya’s, Canvas at the MCA) and Head Chef Micheal Tran (The Bellevue, Clove Lane) leading the kitchen, 40Res is the culmination of years spent refining their craft. Having both honed their skills in Michelin-starred kitchens in England—Raine at Pied à Terre, Tran at Hibiscus—they’re now bringing their expertise to a more relaxed, Surry Hills setting.
Celebrating boutique winemakers and premium Australian produce, 40Res’ snack-centric menu is inspired by travels near and far. Thoughtfully curated, it reflects a deep appreciation for craftsmanship—both in the kitchen and in the glass.
